10 kg infusion bag for hanging in a vat.
The wooden squares are made from French oak from the Vosges region, PEFC-certified and air-dried for 24 months.
The infusion bag is 50 cm wide and 1.20 m long.
It features 4 stainless steel eyelets (2 at each end), enabling several bags to be assembled in succession.
Inside, you'll find the equivalent of 10 kg of wood, in small pieces of between 5 and 10 cm in length, slowly roasted in 3 temperature stages.
Use
Use is the same as for the stave process. The infusion bag is slipped into the vat.
Depending on the size of your vat, several bags can be inserted.
- Recommended use of 4g/l or 400g/hl, i.e. 10kg for 25 hl
- This use is equivalent to 50% of a new barrel.
Oenological objective
The main oenological objective is to get as close as possible to the aromatic and gustatory structure obtained in barrel ageing, with fruitiness remaining dominant and woodiness in the background.
The second objective is to ensure good integration of the tannins.
