Mustimeter or must weigher with 2 scales
This is a hydrometer used to determine the density of grape juice, and the sugar content and alcohol content of the wine (probable alcohol) obtained after complete fermentation.

The same instrument can be used to determine the optimum moment for harvesting and devatting, since during ripening, the density of the grape juice increases and then stabilizes.
At this point, the sugar content is at its highest and the grapes can be harvested. Conversely, during fermentation, the sugar content decreases and stabilizes at a minimum. The wine is ready when all the sugar has fermented.
The reference temperature is 20°.
Indispensable to the winemaker, this instrument, otherwise known as a saccharimeter, densimeter or must-weigher, measures the density of the must, and therefore its sugar content, at a given temperature. It is useful throughout the wine's life, before bottling:
- Before fermentation, it can be used to determine the potential alcohol content.
- During fermentation, it can be used to monitor the fermentation process.
- After fermentation, it can be used to determine the alcohol content of the wine.
